People, in every part of the world, for all of time, have and have had, different and diverse traditions, tastes, cultures and foods. We can’t “judge” them, by saying that some are better than others: we can only discover and choose, those which are and remain, closer to our hearts.

This, is one of the many reasons that traveling is so beautiful and emotion-provoking: because it takes us on the path of discovering new foods, flavors, colors and smells; it shows us and brings us into contact with, sensorial views that are different from “our own”, being always interesting and sometimes, able to surprise us.

Many times, this is the way that “new ideas” are born, in the kitchen: those dishes that are appreciated and unique, that will enter and become, part of tradition, renewing and enriching it!

The world over, nutrition is not only made of flavors and fragrances: it is also a life style and animportant part of health.

Among the many food cultures and philosophies, most well known in the world, be it for religious reasons, ethical questions or scientific convictions, some tend to completely “denounce or ban” certain ingredients and products from the table. For vegetarians, for example, it is perceived as wrong to eat meat or fish, where, for vegans, anything produced of an animal origin, is unacceptable. People following a macrobiotic diet are “against” meat, milk and other products. Keto or LCHF ways of eating say that you should avoid carbohydrates and focus more on consuming fats. Then, there are also those who follow solely protein-rich habits, fruitarians only eat “raw” (raw foods, un-processed and non-thermally treated foods) and there are so many other, interesting “movements”.

Whatever the basis for these choices are, we are all free to nourish ourselves as we want, we are all different and it’s for this reason, that the world is even more beautiful and interesting!

Our philosophy (my personal one and therefore, that of Fresh Energy) is to create a good and healthy way of cooking, without excluding anything “beforehand” and by taking into consideration, the extraordinary variety of ingredients, scents and flavors, that our world has to offer, in their entirety.

In fact, we know that in the right quantities, with the right proportions and preparation, every ingredient can give something unique to “its” dish, transforming it into a great sensory experience, without bringing forth feelings of guilt or turning it into an “enemy” of the scale.

We believe in the quality of flavors and nutrition and for this reason, we choose to use high quality ingredients, rich in fiber, vitamins, minerals and other essential nutrients, like whole wheat flours and cereals and the freshest possible fruits and vegetables, that the season has to give, locally produced and traveling “0 Km”.

We avoid unhealthy ingredients like hydrogenated fats and refined oils and instead of white sugar, we use natural sweeteners, in the quantities, necessary, in order to give our dishes the “right” amount of sweetness.

Let’s be clear: ours is a philosophy, free of “extremisms”, because we know that being “good and healthy”, are two essential components of food and it’s completely possible for them to coexist without sacrifices and… sometimes it’s also right and necessary to “indulge” in some “cheating”! As long as we don’t exaggerate.

In conclusion, we’re “friendly” with all nutritional styles and for this reason, we make many dishes, that can be freely enjoyed by everybody, including vegetarians and vegans.

Simply put, we choose the“right balance”, of variety and quality, that we all instinctually understand and that nutritionists indicate, as being an important factor in maintaining and living a healthy lifestyle, that the nutrition industry and frenetic life of the past few decades, has made us all somewhat “neglect” a little bit.

We do this with passion, attention, care and above all…with flavor!
